Can anyone suggest a good veg to sow in late June / July after I have pulled up all my new potatoes. I'm looking for something that I can harvest in the winter if possible or early into next year.

You could do late cabbages, spinach, carrots (they won't mind the manure if you added any), kale, chard, lettuces, rapini, etc.

You might just risk a row of broad beans, but it'll be touch and go!

Leeks often go in after new spuds are harvested. You'll need to have started them off by now, or bought in plants, though.

I think I'll try the leeks as they are an easy option for that time of year. However as I haven't stated any seeds off yet, can I get these going and is it best to start in seed trays in greehouse and then pot up as they grow or should I just start them in small 3 inch pots?

I think you should  have enough time to get leeks going now.  I started mine quite late last year, but they did fine.  I did choose a late variety though, Bleu de Solaise.  They lasted over the winter too.

It worked out quite well.
