Runny Chutney
« on: September 09, 2009, 19:35 »
Did a big batch of courgette chutney yesterday which is now in jars, but I now think it's too runny, even though it simmered for over 2 hours.

Would I be able to empty the jars back in the pan and simmer it some more until it's thicker, then put it back in the jars (which I wil clean and re-sterilise)

That'll do it :) Always simmer (simmer  :ohmy:sometimes i boil chutney..making sure i stir it all the time, though)
Don't pot it untill you can drag the spoon across and see the bottom of the pan for a second or too, before the mix closes up again.
Good luck :)

thanks for that, I didn't think there would be a problem but am a bit of a novice at this kind of thing (having said that, my first batch I did in August was tested last week and it's bloomin' delicious  :D )
