« on: August 26, 2010, 09:19 »
Ok then Ive just made my second batch of jam (the first was spot on) and the bloomin strawberry jam hasnt set!!

Is there anything I can do to thicken it up again now ie pour the jam out of the jars reheat add some more pecting and re bottle??

Any ideas please I dont want it going to waste!

Exactly as you say, reheat and add more pectin.  :)

My strawberry attempts are always runny...  ::)

I made one batch of greengage and one of wild plum last night, my timing was off and the plum set in the pan while I was waiting for the jars to finish in the dishwasher and the greengage, which appeared to have reached setting point nicely, was quite runny when I checked this morning!

Thanks scabs.  I will pour out and start again

I made some smashing blackberry jam last week with no problems at all!

Maybe strawberries are just awkward!

I think they're pretty low in pectin, aren't they?

Good luck!  :)

They are. You need to add a good squirt of lemon juice with the pectin to help set it. Also, if you've had a lot of rain recently, the strawbs will absorb a lot of that water and your sugar & pectin quantities will be way off due to that.
