The fruit is now in the Brandy. I did ask my family if i could use whisky but they said no.
Im looking forward to tasting it  :D

I think you're very good asking your family what booze to use.

Mine don't get a choice. It is my way or do their own 8)

If I were going to use whisky as the booze I would leave out the lemon and use rind of 2 oranges, and a couple of tablespoons of marmalade to the  mixture.

You could always do a small one for yourself with a fraction of the quantity and then really steep it in whisky. ;) ;) :D

Now thats a good idea as i have enough ingredients left over to make another  :D


This is the first cake ive made like this and im quite proud of the results! Should be cold in an hour so can wrap it up then. So just drizzle a tbls of my brandy over it once a week then? should be fun.

I would like to try it tho as it would like to taste the quality  :unsure:

Yes, just drizzle the brandy over it and it will be well oiled by ch...... Christmas. :lol:

ive decided to try a different recipie this year , i make a large square cake , marzipaned and iced , but out of one of my little cook books ive found one that has the marzipan inside inn chunks and fruit and nuts on the top i liked the look of it so giving it ago different cake and a new tin , ive used the same tin for ever how long have you all been using your * cake tin

Just soaking my fruits in brandy and looked here for inspiration.

Chrissie I'm going to give it a go with the marzipan in one of my cakes.  I make it for aunty who adores marzipan.  I don't ice hers, just double up on the marzipan so it will be a real treat for her to find chunks of it inside the cake.

By the way, my tins used to my grandmas so I dread to think how old they are, at least 60 if not more.  OH every year says 'you're not going to use those old tins are you' but of course I do  :)

Oh... cake 1 was made last Friday... cake 2 was meant to be made on Sunday (but I picked up my new chicks instead)...

I will try to make cake 2 this weekend (I'm so behind on so many things and I've had a week off!!).

My chickens have stopped laying and there is only 1 lonely egg on the skelter... so I may have to buy some eggs for the cake number 2!!!  Then there's the puddings to make!

This is the one I always go back to because of the nuts.
50g almonds
50g pecans]
50 g brazil nuts
75 g grated carrots
75 g no-soak prunes snipped into pieces
350g mixed raisins, currants, sultanas
25g mixed peel
125g softened butter
grated rind of a lemon
125g brown sugar
2 eggs
50g brown breadcrumbs
125g plain wholemeal flour
50g plain white flour
1 tablespoon mixed spice
200ml guiness
2 tablespoons brandy
2 tablespoons black treacle.

1. Chop the nuts and assemble all the dried fruit and nuts into a bowl.
2. Beat the butter, sugar, lemond rind until light and fluffy and add the eggs a little at a time.
3.Add this mixture to the fruit and nuts and add all the remaining ingredients, beating like fury until all is thoroughly mixed. Have a Christmas stir and a wish. Leave over night in a cool place but not the fridge.

4.Divide the mixture between your well greased pudding bowls. cover with greasproof paper or baking parchment. Cover again with tin foil and put the pudding bowls into large pans in which you have placed a wodge of crumpled tin foil, so the basins are not in direct contact with the bottom of the pan.
Fill pan 3/4 full of boiling water, and leave cooking at a steady simmer for about 8 hours.
