Not quite sure I understand what you are planning to do.

Do you mean putting the marzipan in the middle of your cake and then putting the rest of the cake mixture on top of the marzipan and then cooking it?

or do you mean putting the fruit topping on top of the cake mix and baking it all together?

I would make it like a simnel cake..... marzipan in the middle, topping off with the cake mix and bake it.

Then when the cake is cool and has rested with many teaspoons of alcho hic hol, and just before xmonious i would glaze the top of the cake with apricot jam warmed with brandy or ammaretto, place the cryalised fruit and nut on top of the glaze and then whack some more jam over the fruit and nuts.

This will keep for a couple of months if not longer.

Although not in our house; once the first slice is cut the cake evaporates remarkably quickly. And it is only OH and son who eats it

I made my usual 8inch square which will be cut into 3 slabs (for sons and me) last friday and a 6 inch one for auntie.

I made the usual mix and rather than chunks Chrissie, I put a layer of marzipan in the middle of the cake mix.  Yes, rather like a simnel cake but it will be a nice surprise for her when she cuts into it.

Oooo the smell in the kitchen last weekend  :)  :)  :)  They are nicely wrapped up in the porch and will be 'fed' every couple of weeks.
