Easiest icecream ever
« on: September 14, 2012, 08:22 »
I spend way too much time watching videos on YouTube and suscribe to all sorts of channels, so excuse my odd choice of viewing here  ;)

One of the channels I watch has posted this and I thought what a great idea - instant fruit icecream  :D

Chef had an awful accident several months ago when she got knocked off her bike and they have only just started posting new videos again.  Its actually quite a good source of easy Japanese and western style recipes and I've made a few things off here.

Bought whipping cream earlier when I went shopping as I have homegrown raspberries in the freezer and want to try the icecream  :D

ooh, let us know how you get on with the raspberries, cos I have some waiting for my attention!. I wonder if blackberry would work? think you would have to seive out the seeds first....hmmm....I have 6lbs frozen at the moment.
small, Welsh and almost certainly bonkers, but can be tamed with Talisker, if required

My mum makes a fab blackberry mouse and it freezes really well so I shan't bother to defrost it next time I have one. I love the seeds Plum, something to munch on.  :)

Got round to making this tonight and it was luuuurrrrvvvlly  :D

Ended up adding more cream than the recipe says so I think the exact amount will depend on how much moisture the fruit has in it  :)  Very fruity intense icecream and a lot less rich and cloying than the traditional double cream or custard based types  :)

I had a boyfriend once...  ;) he made banana icecream for me in a similar way, but I think he used buttermilk. I'm not sure what buttermilk is but he just peeled and froze a couple of bananas and blended them with the buttermilk.

It was gorgeous.  I knew there was a reason I should've kept that one...DOH!  ::)

(if that was my dog sat on the worktop he'd have knocked it over, knocked me over, fallen off, licked the bowl and the finished product would have a tonne of dog hair and drool in it!  Blurghhhh! Ha!! ) xx

Ooooh Claire, I've got some buttermilk in the freezer from the last time I made butter!  And going out tomorrow, so will get some fruit and cream too!  Love the sound of the banana!!!

I used to make something similar when I was at weight watchers many, many moons ago which was made with frozen strawberries and dried skimmed milk powder and some liquid sweetner.

This is great inspiration for me and for any other lactose intolerant people out there because you can use goats cream or (for some people) yoghurt instead of the whipping cream. This means ice cream is back on the menu and when you have to exclude so much from your diet this is a real boost.
Although dairy products give me terrible problems (won't list them here ) I am able to digest and tolerate plain yoghurt - weird I know, but it has something to do with how it is processed - same with cottage cheese. I can only drink goats milk and cheese.
So for this recipe I used Yeo yoghurt which is lovely and thick and frozen bananas. It is really delicious and whats even better is the ability to have something previously on the banned list that you can make for yourself at home for pennies. Makes you feel 'almost' normal  :D
