Polpettone (Italian Meat Loaf) cooked in tomato sauce

a Traditional Family Recipe.

125gm minced pork plus 125g minced beef
3 tablespns breadcrumbs
1  "  "   fresh grated Parmesan
1  "  "   finely chopped parsley
½ onion peeled and finely grated
1 egg yolk, beaten
Salt & pepper

For the tomato sauce:
1 clove garlic thinly sliced
3 tablespns olive oil
1 onion peeled and finely chopped
Piece of dried chilli
3 cans tomatoes, sieved

Mix the meat loaf ingredients together, you will need quite a lot of salt & pepper, as the seasonings will seep out as it cooks.
Press all the ingredients together and shape into a flattened ball. Brown it a bit in the oil and then remove from pan
Soften the onion in the oil, then add the garlic and the crumbled chilli. Add the sieved tomatoes before the garlic browns.
Lay the Polpettone in the sauce.
Cover with lid slightly raised, so a little steam can escape and cook very slowly for about an hour and half for sauce to thicken and reduce by a third.
Taste it - if it’s still 'sharp' a little more salt will correct that.
Toss any chunky pasta in the sauce, serve with sliced Polpettone and more grated Parmesan to sprinkle over.

This makes a lot of sauce (enough for 6/8 people) but it keeps in the fridge for about 4 days or  freezes very well ;)

me too love leftover sandwich if theres any left over , the last one i did i put a plated coat of streaky bacon on it looked very special but did create alot of fat also saw a cook slice a round pepper and put a slice of meat loaf in it and cook t tll pepper was done looked good
