Yes, baking parchment is definitely the stuff, but I also use non-stick loaf tin liners which you can get from Dunelm.  They do both the 1lb and the 2lb sizes, and it means you don't have to faff about cutting parchment to size and snipping the corners, etc.  You don't need to grease the loaf tin either, just place the liner in, pour in the mixture and bake in the oven.  Then just tip the loaf/cake out of the tin and either leave it to cool in the liner, or peel the liner off before placing on the cooling tray.

They're £3.99 for 40, so only a penny each!  Sorted!  :)

OOOOOO.......... not thought of Dunelms. And there is a branch opened up near us. That sounds better value than the Lakeland loaf liners that I use for my selling cakes.
Thanks for that.

What a really useful site this is :D :D

I made a large lemon curd tart and a large mince pie today using circles of baking parchment in the bottom of the tins. It really does work much better than ordinary greaseproof paper and I was pleased with the result. Thanks folks.
Now I need a cheap source of mincemeat...

Make your own. Tastes so much better than any bought stuff.  Have been making my own for 35 years. So many different variations!

And so easy, just bung all the ingredients in a clean bowl and stir it now and again until it goes syrupy and all the flavours develop and that is it!

I put the mix into large freezer boxes and store it in the fridge. Have kept some from one year to the next. ;)

That's the trouble with life. By the time you feel you are getting the hang of cooking you can't eat as much as you would like to.
