as the question says really, I have a few of last years onions that have started sprouting new growth, can these be planted like onion sets? or am I just best just putting them to compost.

they would run straight to seed, so not worth planting.
Chop what you can and use/freeze that's what I do

You could, but bear in mind they could have crossed - darn those bees!
