How to peal a hard boiled egg.
« on: November 22, 2010, 10:59 »
Every time I hard boil my eggs they are a nightmare to peal. I've tried plunging into cold water, pealing under a running tap, rolling on a table. Does anyone know how to peal a fresh egg so that it looks like an egg when finished rather than a luna landscape?

That is because you are boiling really fresh eggs. To boil an egg it must be at least a week old.
Staffies are softer than you think.

I find its the opposite, my own eggs are much easier to peel than shop bought

If  i am doing a batch of pickled eggs they are put to one side for two weeks before boiling. It makes peeling them simple. :)

Joy is quite right I've already mentioned this on the washing and refridgerating dirty eggs post you're obviously not paying attention Orchardlady write out 100 times "I mustn't hard boil fresh eggs or their whites won't set properly and they go all crumbly!!"

Ah well, I did see your comments HF but I was just hoping someone had a magic cure for the pox like texture of my HB eggs! I'm simply not organised enough it seems. Eggs don't stay in the house long enough, hey ho. :)

the solution to this problem is to get more laying hens so that you end up with more eggs than you can cope with. Thats my excuse everytime I get more anyway

Now, I saw this on Giles & Sue Live the Good Life last week.
To actually peel the eggs they tapped them all the way round the middle on a table (other hard surfaces are available) then rubbed them briskly in their hands and hey presto! the shell all came away without the fiddliness & fingernails digging into the white! Also, my mum always used to plunge the whole egg into cold water for a couple of minutes after removing them from the boiling water...

But iff the eggs are too fresh, nothing is going to make a difference becasue the white of the egg is the worng consistency ;)

Only eggs which are a week or so old are good for peeling :)

Joyful I'll have to remember that one...excellent reasoning powers you have. Catsmuvva I'll give it a go next time but I don't hold out much hope.

Catsmuvvas methods should work if you've used old eggs and boiled them at least 5 mins I can't see what problems they should be.

Sorry, but Joyfull and HF are right, if your eggs are too fresh, they won't peel well!

And I'm the same as you OL, I never have enough eggs for me, so swear everytime I try to peel a fresh boiled egg!    :) :)

My understanding is that putting the eggs into cold water after hard boiling them is to stop the black (sulphur) forming around the yolk. :)
Experience is what you get when you didn't get what you wanted!!

I've just consulted the sainted Delia - "always cool them under cold running water to prevent them from cooking further or developing a dark ring between the yolk and the white." I never knew why mum did it, & I just did it because she'd always done it, but now I know! Thanks Sassy.
