What to do with empty raised beds over the winter?

We've just built some raised beds and filled them with a mixture of compost and topsoil. I realise I've pretty much missed the boat for this year's growing season (we can't plant right now because the compost is still heating), so I'm looking for advice on what to do with the empty beds until the Spring. Should I cover them with something, or plant green manure (and if so, which type)?

Any advice appreciated!

I am thinking of dwarf french beans as a green manure, John suggests it in "Vegetable Growing Month by Month".  It will act as a fertilizer fixing nitrogen and you can dig it in as organic matter too.
