yes just sterilise the jars as you would if making jam and put whole cloves in white wine vinegar (make suer they are fully covered at all times or they go mouldy) and also store them in the fridge.  They are a bit drier than if stored in oil but taste fine

The Lazy Garlic stuff is chopped though, with just enough wine vinegar to coat but not enough so you can see any liquid, so when you want garlic you just dunk your teaspoon in and bob's your uncle.

Thanks for the link trikidiki, so providing you store it in the fridge its ok.

I was planning on storing crushed garlic in oil just for periods of lazyitis.  I probably would have stored it in the fridge but who knows.

Storing in the fridge would certainly slow down any bacteria reproduction but won't stop it, otherwisw all your usual fruits and veg wouldn't go off, but they do.
