Shallots

Phew!

That is an encouraging picture for those of us still waiting to see the little green shoots form out shallots!

Pickled onions!!

im growing lots of shallots cause my dad told me to... What use are they in cooking are they used just like onions?

There are some casseroles where you really want to use small whole onions, preferably not too strong tasting, and that's where shallots are perfect. I'm thinking of things like beef bourguignon. And chopped up shallots are also perfect for things like sauteing vegetables, like cabbage or brussel sprouts, because again you don't want anything too strong tasting that would overwhelm the veg.
