The easiest has got to be the radish.  My favourite has to be perpetual spinach.
Cheese makes everything better.

Squashes & courgettes - I had a few germination problems this year (not normally) and also some weather damage so had a few losses, but the others made up for it.
Failure is only a temporary change in direction to set you straight for your next success.
Only those who dare to fail greatly can ever achieve greatly.

Then there's peas.

And more peas. Also even more peas!

Welcome tom!
Did it really tell you to do THAT on the packet?

These are "Kelvedon Wonder", but next year I'll be growing a lot of heritage peas that I raised for a seed crop this year.

ok I lied...I suppose raddish may possibly be the easiest but I find them irritating...too many at once, allways having to thin them out...and after all that I don't really like the taste...I'm not bothering next year, gonna grow more spuds defo...oh just realised I have trillions of raddish growing right now in the greenhouse

Ah! My radish tip.

Again the infamous cat litter trays. One seed per inch. No need for thinning, you can keep the slugs off easily. Remember sucessive sowings.

Radish dont' need a lot of nutrients, so you can use "pre-owned" compost.

Look like this when they come up...
