Raised beds for growing Stuff

I moved house in January, the new house has borders made out from sand stone, they are kidney shaped which makes the garden non-uniform and kind of cottage garden which i like. I want to grow Veg in the garden and dont want to make dedicated vegetable plots, the borders are quite high, If I add another layer of sand stone and add more soil I will have higher borders, would this be better for growing veg in the future? I would like to do carrots and potatoes, I am thinking the deeper the borders the better, is this right??

Ooo I am rubbish with metric, already about 2 feet in parts I think, they kind of slope upwards towards the hedges. I wondered if I should level them  so all the borders are similar height, dont want to drop the level because that sounds like another labour intensive job  :unsure:

Oh that is good, so a good tidy up will do the job, will propbably top the surface with some new top soil and hopefully spend the rest of the summer clearing them and making good for next year, thank you!

You will however need to be zealous about your watering as raised beds like that will dry out fast .

thank you will be mindful, dont have a choice as the beds are well established with lots of mature shrubs and trees, so would be a shame to lose all that  :)
