peel back a couple of outer leaves and pop a kernal with your nail. If the juice is milky leave for  another week but if clear pick and eat as soon as poss - the sugars turn to starch as soon as its picked - you will never buy another cob :D

Shaun and Adw both offer good advice. However, I'm surprised that they are ready unless you are growing them in a tunnel or greenhouse?
Ah well ! There is always next year !

The following text is from the RHS website

'Test for ripeness when the tassels have turned chocolate brown; squeeze a grain between thumbnail and fingernail - if a watery liquid squirts out then it is unripe,[/u] if it is creamy the cob is ready. Twist the ripe cob from the stem.'

Hallo Hammers07, have your sweetcorn plants sent up the pointy flower spike at the top of the plant and sent showers of pollen down onto the cobs below yet - if they haven't your sweetcorn will be no where near ready to pick yet, as the cobs need to be wind pollinated with the pollen from adjacent plants to form the juicy yellow kernels inside.
Gardening organically on chalky, stony soil.

Well in my experience ...

... the sweetcorn is ready when you're having to fight the bally mice off with a stick ...

My tip is to wrap them up in fleece before they're ready or you will seriously not get an unnibbled cob!

the tassly bits are their, they are more red in colour than chocolate brown, they were planted in May and are about 2 - 3 feet high. Every plant has cobs on it of various thicknesses but are all covered. Do they become exposed on their own or do i have to open them up ?

By the way Planted them in raised beds which as i've said elsewhere seems to dry out quicker than ground level.

Sounds like a good tip

Mine were planted out in May and won't be ready until Aug/Sept
You harvest the cob complete with its outer leaves ie covered - the ones you see in supermarket have already been de-leaved so  you can see the kernels... they dont appear like that on your plants!
