Does butter get rid of the scum?  I am new to this jam making :D

Yes using a little knob of butter will stop the scum. I think scum is a horrid word for it tho' as it is trapped air bubbles.

You can also use a teaspoon of sunflower oil instead of the butter as some folk are allergic to dairy.

I think I have cracked it with strawberry jam now.
I use 4lb strawberries, 8oz of grated bramley apple cooked in enough water to stop it from burning.
and 4lb of sugar and 5 tablespoons of lemon juice..

Once the apple is mushy I put it with the lemon juice and strawberries and cook gently until the strawberries are soft and the pectin is extracted.  If I think it is ready I do the methylated spirits test to check and then add the sugar and boil to a set.

I don't lilke using certo or jam sugar as they often have sulphites in, and the pectin powder doesn't do it for me at all.

You don't really want a stiff solid set as it is much nicer with a little movement when you put it over the scones and cream.

I have just made strawberry and passion fruit, strawberry and cointreau,  strawberry and Kirsch, strawberry and vanilla, strawberry and elderflower and plain strawberry.

Sounds like my dandelion syrup. I found it online it was meant to be excellent on ice cream like a topping syrup.
Pass the hammer was more like it

I find that sterilising my jars in the microwave also works better than the oven - put the jars (still a bit wet) on high for approx 1 min.  When doing this in conjunction with a jar funnel I always have good results

Just remember clean oven gloves/tea towel to take them out  :blink: I usually do 3 at a time and put the next set of jars in while I am filling them Perfect little production line!

Ok trying strawberry in the pan today, got all my tips and hints ready. Smells amazing so far, maybe doing two batches as we are still working through the harvest from yesterday and today we have more ready to pick and i mean a lot more  :blink:

Didn't know you could use oil instead so thanks for that tip. What's the methylated spirit test? please

This damn jam has really cheesed me off today.

I am going to re-boil but i didnt want to add pectin, would a re-boil work on its own or not.

Its really had a negative effect on the whole day  >:(

What sugar are you using?  The silver spoon jam sugar had a strawberry jam recipe on the back that I followed really easily  ;)

I have never rated the jam sugar so i always use granulatd.

Its had the re-boil which seemed to take an age, but alas we either have a good set or strawberry toffee in a jar.

Anyone got a hammer and chisel ready  :lol:
