We have access to 2yr old horse manure, fresh chicken manure, cut grass, comfrey and nettles. We are growing pretty much everything, so I would like some advice on the best ways to use them.

We have been digging in a lot of the manure into the ground.

2 year old horse manure, lucky you!  :D  
I'd just mulch with it. I don't go in for digging any more ;)
Chicken manure (and fresh horse muck) is good for making hot beds with.
Grass cuttings can be used as mulch, especially recommended for no dig potatoes ;)
Don't really know how to use comfrey or nettles though I have lots of one and a great sea of the other :D
I demand the right to buy seed of varieties that are not "distinct, uniform and stable".
