We like Mexican and eat it quite often. :) Did you say you made your own tortilla chips?

I've seen them chop up tortillas to do that matt. ;) I wondered about making them from scratch... on the other hand, perhaps that is the way to do it. ::)

Bag of corn tortillas cut into wedges and fried in a little oil is how I do mine. ;)
Cheese makes everything better.

That's basically the method matt showed. ;) I'd rather just buy chips then..

I'd still prefer to buy them than use those bought tortilla wraps.   :) :tongue2:

If you're going to buy something ready made - I make my own flatbreads - then I might as well buy chips ready made rather than adapting something else ready made! Simples!

Anyway, we digress. I don't believe I received an answer to my original question.

Do you shallow fry them Ice?  How much oil do you need? I can see where you are going here with fried tortilla chips and sounds lush when you are in the mood for that sort of thing  :D

I've made baked ones and they are nice, but they are a dry crispy texture, rather than fried crispy  :)

Just shallow fry them, you don't need much oil and you can sprinkle with spices and cheese too.  :)
