The "toxins" are oxalates. Present in a lot of veg, but toxically high in the Rhubarb leaves. They can cause kidney damage if you ate a lot of leaves. Spinach leaves have oxalate too. It is not advised to feed kids every single day on spinach for that reason.
Compostings no problem. Think of it as like a low dose bionutrient rather than a toxin.
To me Toxin means Botulism or tetanus. Such a misunderstood word! I blame colonic irrigation.....
