Bulgarian potato salad

Just made this for lunch and it was so tasty I thought I would share the recipe.

8-10 egg size potatoes boiled and broken up or diced. Stir in  a small onion diced or thinly sliced. Pour over 1/4 cup of apple cider vinegar and 1/8 cup of olive oil. Season with sea salt and fresh ground pepper. Sprinkle over chopped chives and stir.

I served with nice crispy little gem lettuce and cheese pastries. A really nice lunch.
