it is simplicity itself
boil your spuds ,
just brake them down a bit while still warm ,
then mix in some finely chopped garlic , salt and pepper ,
drizzle on the olive oil , give it a good mix serve warm .
it can be made ahead and warmed up in the microwave it has a better flavour when left to stand a little .
when i do my own i change the oil for strained yogurt and add spring onions

I had no idea this was greek in origin. This is delicious hot or cold. I've been making it for years, sometimes with garlic, other times with fried green onions, usually with both.

i would think a little chillie as well for a change,  we love it as well in fact i think i will do some to day .
they say olive oil is good for clearing out the colesterol and as i have never had to buy it in 5 years , land lord is allways giving it to us and its virgin as well , the olive station is just down the road from us where they press it all , there are sacks of olives every where and trucks .
