Are there any decent recipes which are likely to change my mind?  The usual moussaka and salad-type recipes are really not appealing to me.

I might consider growing them if I see something I like the look of.

Creamy courgette lasagne (recipe on BBCgoodfood website).

I make it with homemade tomato sauce and bake as for a normal lasagne. Haven't found anyone who doesn't love this yet

I have the 'Red Velvet Chocolate Heartache' recipe book which has a lot of recipes using courgettes so I am planting some seeds just so I can try them.

Courgette bread.  It's like foccacia 

Courgette fritters, yummy with homemade fat chips and mayo

Courgette pakora. I used grated courgette, potato, spinach, coriander, onion and maybe a bit of cauli florets and of course the usual curry type spices

Grated courgette is lovely in "carrot" cake  I grow the yellow ones specifically so I can make cake with them and my husband doesn't suspect. Lovely in muffins too

Excellent in ratatouille and tomatoey bean dishes.

I make a sauce for pasta with them too.

Ooooh, courgette fritters and courgette bread - excellent. Courgettes are my favourite. I make courgette fritters with feta in them and serve with BBQ or griddled lamb *heart flutters* 

I make a courgette, lemon and ricotta lasagne/canneloni that everyone always enjoys.

And I made a courgette and bacon bake last night - saute an onion, add a pack of streaky bacon, four grated courgettes and a chopped chilli (optional). Take off heat, add 300ml creme fraiche and an egg. Put in a ovenproof dish, top with cheese (and breadcrumbs if you have some knocking around) and bake @200c for approx 30-35mins. Made it up but it was bloomin' lovely!

I don't like courgette either but I grate it up and put it into pasta sauce.  It makes it a bit thicker.

We made Chocolate Courgette cake last year over 5 times  very nice, but don't be fooled that this is a way for kids to eat healthfully, with all that sugar...and you need it.  We tried with less  :blink:  Very moist though and tasty!
