I like it but dont do much more than roast it or make a Thai soup but those recipes look good. Thanks for posting😊

There are loads of things to do with squash!!! I wish I had it growing like mad here. You can roast it in the oven and then mash it up and put it in breads, cookies(Biscuits), pies, Pasta, all sorts of things. I tried growing it here this past summer and I got a few meager ones, but they will be made into yummy dishes. :) Even baked in the oven with brown sugar, sultanas and cinnamon and then topped with some cheddar cheese to melt in it. YUM Also you can slice and quick fry and splash on some basalmic vinegar and put with some salad greens. YUM  Or chopped up and put into a rissoto. Veggie lasagne, soups, stews the possibilities are endless. I even came across a recipe on pintrest for a pumpkin truffle!! Not tried it yet. I love squash. :D

I will be keeping an eye on this thread!  I usually only make soup with my butternuts, but I have 9 this year!  :ohmy:  AND they are ripening, which my 3 from last year didn't fully!   :(

I did see a nice recipe yesterday, just got to remember where it was, then I'll put it on here!

I hate squash too. All types. Lol I recently stumbled upon a recipe for chocolate zucchini (courgette) bread.
It might make giving squash a second chance (although I doubt it lol)

This one might need to be set aside till you have got more used to squash flavours, but it sounds lovely. Am making it when my squashes look a bit more ready and when my saffron ( :D) is harvestable.

What a brilliant thread this is!

My current favourite is roasting big chunks of squash with chicken thighs, sliced onions, sage, pieces of lemon and a splash of balsamic vinegar.

Great with hm bread of any kind  :D

Yes, always add it to winter traybakes - mine have either lemon/pepper seasoning or a sprinkle of cayenne mmm
