Leftover Ham

We are snowed in again and I'm overdue a shopping trip so I'm looking to make a meal for 2 out of leftover ham, I have pasta , rice and potatoes a few shallots and carrots and plenty of milk and some parmesan and cheddar. Store cupboard essentials are available and frozen peas.

What might I make??

I may be a bit old fashioned, but Brian loves a nice spaghetti or pasta carbonara with left over ham, cheese, cream, parmesan (and peas too, why not??) lol

In fact, its what we had last night!

Thats all I could think of Ann, I'm sure he will enjoy it again.

We had chicken pie 2 nights ago with a potato topping and cottage pie last night so as long as it isn't topped in potato I'm sure he won't complain :lol:

Funnily enough we are having left over gammon joint tonight. I'm going to make risotto with rice (obviously), chopped roasted peppers and then adding the gammon cut into small cubes. Add grated feta cheese at the end. The gammon was £4.99 and this will be the third meal from it.
The reward of a thing well done is to have done it....

Pooley, I don't suppose you have any split peas to use with the ham for split pea soup? If you have it, chicken broth makes an even tastier soup than just water as the base.

Use the ham with the carrots, onions and a tin of tomatoes? to make the sauce for the base of a lasagne. Creamy cheese sauce for topping...lovely

No split peas but I do have lentils and also have tinned toms, so now I need to make a decision, thanks for all the bright ideas.

I'm just not in a cooking mood today, I'm in a knitting mood but I don't think that will create a nutricious meal ::)

Cook your frozen peas, blitz them in your food processer.  Put them back on the heat with a little milk to loosen.  add salt, pepper, parmesan and your ham.  soup of the day !

Parboil whatever veg is available (including potatoes)..... make a white sauce, add ham and veg top with grated cheese and bake in a shallow dish until golden and bubbling.
