Parsnip Crisps
« on: January 18, 2010, 17:13 »
Here's one for you to try before the parsnips run out.

Peel a couple of parsnips.
Then with the peeler shave as many strips of the parsnips as possible.
Place the shaved parsnips in a dish and sprinkle with olive oil.
Crush black pepper, salt and thyme in a pestle and mortar (about 2 level teaspoons).
Sprinkle three quarters of the crushed ingredients over the parsnips.
Cover a flat tray with aluminum foil.
Place the parsnip shavings on the foil.
Cook in an oven set at 180ºC until just turning brown.
Remove and place on a plate until crisp.
Sprinkle remaining crushed salt, pepper and thyme.

Delicious

Now that's something I think I will be trying. :) Roughly how long does it take until they are just turning brown, Fisherman?

Hi Argyllie
They start turning brown in 10 minutes are so, unfortunately or fortunately they are addictive. Not good for the old diet but what the hell.

I like beetroot crisps as well - do you cook them the same way?
Staffies are softer than you think.

Joy, I love them too. :) I've just found a recipe on the internet - happens to be on Mumsnet - which basically prepares and cooks them the same way, but without mentioning seasoning. I also looked at an American recipe which requires them to be fried.
