A friend gave me a couple of heads of celery and I was going to braise a head in stock with tomorrows lunch.

Anybody braised it before?  How long approx to leave in the oven for?

I was going to cut it in half lengthways to help cooking speed.

Covered, gas 4, 30 mins.

Fry some chopped onions and carrots in a little butter.  Add celery batons, stock, bay leaf and S&P.  Cover and bake as above.

Mix equal amounts of butter and flour together.  Put pan over direct heat and stir in butter mix to thicken the liquid, adding a little at a time.  Simmer for two minutes.

My mother used to serve us boiled celery as a side dish. Yuk Yuk Yuk!!! Can't imagine why anyone wants to do that to celery. Don't mind it cooked in soups and stews but that's it.
