Cutting off leaves to enhance fruit

A tomato grower of many years always told me that you should cut off all the leaves when fruiting to enhance growth and production. Is this true and can it be done with runner beans ?

Surely if you cut off all the leaves, the plant cannot photosynthesise and therefore dies?

Sounds a little extreme to cut them all off.  Some people advocate cutting a few leaves off tomato plants to increase the light / sun.  Others say you shouldn't do so, because the leaves create a warmer microclimate.

Doubt it would work with runner beans either way, as I think they don't ripen in the same way.
I try to take one day at a time, but sometimes several days all attack me at once...
