Pickling Onions
« on: April 09, 2009, 15:25 »
I made my own pickles at Christmas using vals recipe and they were gorgeous...but sadly I've just finished the last jar... :(

Are pickling onions just small onions or are they a special variety? Can I grow some now, use shallots maybe?  I know you can pickle shallots also, but not tried them. They can't just be confined to Crimbo surely?

The only 'onions' I ever pickle snippy are shallots and silverskin.

I've still got one jar in the cupbaord left over from last year's shallots.

I grow white lisbon  spring  onions and let them get a bit bigger, they are great for pickling  mine have stayed crunchy all winter - and it  works  out cheaper

I used up all the smallest, fiddliest shallots for pickling. Might try Val's recipe though as the one I used was face-screwingly sharp

I used spring onions last year as well this year trying some of the red ones as well as shallots but growing them at home as for some reason they do not like the plot - probably like the extra attention. :D :D trying to grow some big sweet oiniuons this year to bottle with vinegar and brown sugar yum

My best friend said that when her Dad used to do his garden.  He would sow loads of onion seeds, then the thinnings he would use as spring onions and let the rest grow on.  He never bought spring onion seeds!
