A nice one for a cold night:

Prep  time 10 mins,  Cooking time approx 1 hour

8 large chicken thighs and drumstick
2 Heads of garlic seperated but not peeled
2 lemons - 1 sliced thinly and 1 for juice and zest
2-3 tsp dried red chilli flakes
1-2 tsp cumin seeds
1 bayleaf
7 fl oz white wine (200ml)
Olive oil
sea salt

Preheat oven to 180c/160c fan/Gas 4
Dry chicken.  Scatter garlic into a shallow casserole dish and place chicken on top.  Scatter over the lemon juice and zest, lemon slices, chilli flakes, cumin seeds and bayleaf.  Pour in the wine and drizzle chicken with olive oil and season with the salt.
Cover tightly.  Place in preheated oven and cook for 30 mins.  Then remove cover and continue to cook for another 20-30 mins or until chicken is lightly golden and cooked through.  Remove from oven and garnish with chopped parsley if desired.
Birds in cages do not sing  -  They are crying.

when you say 2 heads of garlic. do you mean 2 cloves or 2 bulbs?  2 bulbs sound strong

You can use that much if you don't peel them.  Roasting the garlic in this way makes them sweet and delicious.
Cheese makes everything better.

:lol:  :lol:  :lol: ha ha very funny, but why go out for a curry when your such a fab cook? hang on suppose its cooks night off!! im loving these easy soup recipes too. i was put off years ago when i made the most revolting carrot and coriander soup. something went wrong and it was gross. but im now willing to start again. the pumpkin soup was fab but now out of season! :(
