Celeriac - when to harvest?
« on: August 28, 2008, 19:11 »
I was given some celeriac this year by my neighbour and planted it.  Now I have never eaten celeriac and am clueless about when to harvest it.

Any advice please and also how to cook it (if you do that is!)

I love celeriac.  The first time I had it was at a really fancy restaurant and they had grated it and flash fried it in butter.  I like to mash it, like mixed mash.  You can even roast it like parsnips.  It is a funny veg though with lots of roots growing out of it. Delicious, it is.

I am growing some, I think it comes up later in the year but I have no real idea.

I shall pick that then.

Unfortunately, however daft that sounds, can't be more precise than you harvest them in the autumn. There, you helped, I know.

Treat as any root veg for storing, apart from it being common practice to take off the bottom leaves at the end of the season - I'm doing this nowish - and let the sun get at the top of the root, which should be well swollen and exposed by now.  If it is small it's still just as good to eat, won't store that well.

When weather deteriorated, end of growing season, dig them up. Leaf and stalks are good for flavouring and freeze well. Leaving in situ for pulling is possible albeit the slugs.

The roots indeed can be eaten raw, too, grated into salads and such likes.

I enjoy them most in winter warmers, as soups, stews, etc, they give a lovely earthy flavour.

I'm  the same as you Green fingers and pulled one up last weekend, only to find that they are still a bit small (apple size)  try running your finger around the top of the root. That should give you an idea of its size
