I've had problems with mold air drying them, I put them in a fan oven for 3-4 hours at around 50 degrees or until brittle.  Store whole or powder them.

You can freeze them as is - but I like to slice and dice them, then freeze in an ice cube, just add a cube or 2 to meal then.  Not my idea pinched from someone else but its really handy - save space in the freezer and saves trying to prep a soggy cold pepper.

Mrs Smith threads ours on cotton and hangs them in the larder/pantry.
They last all year
Simple as that

My B & B kitchen is too damp and greasy    So I dry mine in the oven (split open first). Low oven (you can prop the door open) for an hour or so Keep an eye on them though as you don't want them catching fire!  Keep checking them as once they're sufficiently dry they need taking out.   They can be dried in a dry room (lounge mantelpiece comes in handy) on kitchen paper  :D

Once fully dry you can store them in an airtight jar

As post above, I had loads last year and just tied them onto some string and hung them in the kitchen. I didnt have a problem with any.

Best to pick them green as more will grow in there place and they will go red when you hang them up.
