We had an absolute feast today!

Son #2 made his famous fried chicken.

Mrs. Sub_p made her famous squash casserole, made with crookneck squash from my garden and bi-colored squash from the organic farm where Son #1 works (the farm owner generously shares produce with all of her staff, none of her employees go home hungry! All employers should be that generous and kind, it is a significant employee benefit).
 
Son #1 also brought some wonderful green and wax beans and an orange slicing tomato (also from the farm).

No potatoes, pasta or rice needed.  We ate like kings without them!

Is that a summer squash recipe SP (what we would call courgettes) Any chance of sharing?  I rather like American style casseroles and my plot plants look like they are about to start deluging me with fruits.

I agree about your son’s employer as well.  Not only kind, but a great way to ensure nothing gets binned that could be eaten.  Food waste in retail is quite big news over here and most shops are taking steps to reduce it.  We get to take anything reduced and not sold at work and it very popular.  We also get to take anything recalled for things like labelling anomalies.  I have had some great gifts that way - a whole turkey one December as it was labelled with the wrong weight and a rolled shoulder of lamb joint another year because they had missed an ingredient off the list on the box.

They do try and give away stuff to charity, but they are a bit erratic about when they pick up.  Failing all else and stuff that the staff have rejected or been failed to be collected, or unfit to eat as damaged, it goes into a special bin to go for methane production for power stations.

I think it is a Paula Deen recipe, or modified from a Paula Deen Recipe.  It seems PD has more than one squash casserole!  If I can get the recipe, I will scan it and post it.

Yes, the squash would be considered courgettes. The bi-color type I think is called Zephyr, looks like:

Ask and you shall receive.  I scanned it both as a .jpg and as a .pdf file, use whichever works for you.
My wife was not certain of the recipe source; possibly Paula Deen, but that is uncertain.  I hope you enjoy it, I will likely put a link to this post over in the recipe section as well.

Roasted new potatoes and chicken thighs, plus the last of the plot broad beans and some bought in tender stem broccoli.

Well think of it as a starting block like basic mac and cheese and mess it around as you see fit  ;)

Sounds good to me as is, so I’m trying that first, but can’t promise I won’t start adding bits to later versions  :lol:

I'm trying to use up produce from last year, so had bit of an unseasonal venison stew with lots of last years chanterelles and I used dehydrated tomatoes in the sauce. New potatoes, summer sprouting broccoli and the last of the sugar snaps added some freshness

Cajun dirty rice for me & minced beef & onions in gravy & fried sliced leftover potatoes for himself with a freshly baked baguette- talk about carb overload  :lol:

Traybake with sausages, new potatoes, mushrooms, cherry tomatoes, peppers and anything else I can find in the fridge that needs using up.  Sausages reduced to 50p in the little shop up the road. Paul bought all four  packets they had reduced, so the y will become a staple food I think.
