How long cauli lasts on the stem

Title says it really, I have 2 stunning cauliflowers (though I say it myself) ... ready to cut but meals are planned for the next few days, how long can I leave them please (if I must I'll freeze them but would prefer not to ...)

I ditto that.  One minute the caulis are perfect, you wait a couple of days and bam,  they are over and starting to flower.  Cut them when perfect and store in fridge.
