How many small one's should I expect from a plant before stopping them ?

I generaly allow three to grow.  Anymore than that and they don't seem to mature properly.  I grow Tom Fox which is your typical pumpkin that Tesco sell.

Depends what you want. If you want big they you should defiantly stop after a maximum of 3 per plant. As there is only 2 of us we prefer many small pumpkins weather than a few small. I let them all grow and see what we get.
Be like a duck. Calm on the surface but always paddling like the dickens underneath.
