Assuming you are referring to Jerusalem artichokes.  I grow these in a pretty sunny spot and they are real hooligans.  They will shade anything out once they get going.  I try to keep them in a separate bit of the plot and I completely dig them up every year and replant a few tubers.  I'm not sure anything will do very well close up to Jerusalem artichokes.  You may get a bit of nice fresh mint off in the spring before they get going though, after that the artichokes will take over I reckon.

If you interplant, you will have a game and a half digging the artichokes out won't you?

I wouldn't interplant with anything Madam Cholet - I had mint next to mine and it didn't go anywhere near them. And you know how mint spreads.

I interplant with sunflowers, to make them more interesting.  Nothing at ground level.

I cant remember what the word is but other plants dont like to grow near artichokes or fenel. I've certainly noticed my plants are smaller the closer they get to the artichokes perhaps just because they drink alot. And I top them at about 4ft and thin the plants right out to prevent winds blowing them over.

I would think a vigerous mint variety would be a brilliant ground cover between plants and will get started while the chokes are small and not too shading.

Infact I may try this next year too!
