Some shallots store better than others

I've been storing last years crop of shallots in my garden shed. Yesterday I noticed that most of my Jermor shallots have gone soft, while not one of my Golden Gourmet has.

Something for me to bear in mind when I start eating next years crop.

Yep, I only grow golden gourmet's, red sun are not too bad either.
