I have bought 50 sets and need a little advice.

The instructions say to plant at a depth of 5cm but this would totally cover the blub.  I thought onions sets sort of had their nose sticking out of the ground?  It also says to plant them now-ish but it is still so cold here I'm not sure if I should hold off for a few weeks or not?  Are they frost hardy?

That's all correct and yes they are hardy
Don't forget to keep checking them cos the weather can pop them up and the birds can pull them up. If this happens just poke them back in again till they stay put

i cover mine up to stop birds tugging them out!!

red baron i don't plant just yet..end of month
for me as i find they're inclined to bolt if planted
to early, white ones are in tho.
