what's the best way to dry them, or is freezing them better?

freeze them with water in ice cube trays.

Apart from rosemary which is very good dried.

Just my opinion of course.

how do you dry it though, do you just hang it up some where or does it need to be in the dark?

If you have paperbags, hang them up with paper bag tied around them. It'll keep out light but still allow it to breath and dry out.  Use rubberbands otherwise they might fall down/out of stringtied bunches.

Generally, woody herbs(thyme, sage, rosemary) dry better than leafy/soft herbs. Basil, parsley, chervil, etc do better when frozen. Don't bother with the ice cubes (sorry Jake), just stick the clean, dry herbs in a plastic bag. Smack the bag before sprinkling into whatever dish you need the herbs in. They do go a bit black in freezing but it doesn't affect their flavour. Mint can be dried or frozen, either way is good, it just depends on which flavour you like best.
