all my seed potatoes arrived today do you think it will matter if i keep them in the packaging till the 31 efore i start them in there trays for dhitting

Naaah, even if they start to chit then you can rub them off.  Just make sure they dont go green!

The idea of chitting is to rub them off.

Potato puts out a couple of sprouts.
You rub them off.
Potato panics and puts out 4 or 5.

That is the idea behind chitting.

Just letting them sprout then planting does nothing advantageous.

Why not and how can you stop them from going green? I thought that was the whole point? Small stocky green / purple chits with the tubers going green as a) they are a modified shoot and b) they are exposed to light.

In answer to the original post, as long as they are kept cool, dry and in the dark they should be fine as they are.

I understand that it gives the potato plant an early start to it's life cycle life, so you should get spuds a few weeks earlier than if you didn't chit. That's why we tend to chit earlies and not worry too much about the others.
If you are not going to plant early, then IMO it's not worth chitting
