What to do with squash?

I've just cut some uchiki kuri squash and was wondering if they need leaving for a short while before eating. I would like the flesh to be dense and sweet like the ones I can get from Waitrose. Is there a special post harvest procedure that I should know about to bring the sweetness out?

Apart from making sure they are really ripe, before you cut....I don't think there is much that you can do to alter the taste.
After cutting you should cure them for 10-14 days in a greenhouse or on a sunny window ledge, but i think this is only to set the skin so that they keep well, i don't know if it improves taste :unsure:

Found this site that suggests that some do improve with keeping :)
