Excess of huge parsnips

Aren't parsnips perverse plants! After really struggling to get decent germination last May, my fourth sowing seemed to have germinated to the last seed and I now have two 10 feet rows of huge vegetables that I'm struggling to use/give away

What a dilemma to be in lol. I freeze them at this time of year to get me through to the next crop harvesting  :nowink:

Good morning AlaninCarlisle,  parsnips do make the most excelent countery wine...possibly a home wine maker would be glad of them.

Yes I always have the same problem with them and never enough freezer space, I’m sure someone will be grateful of a bag full

 Boiled, mashed and bagged  then into the freezer... mmm creamy mashed parsnips... heaven :) Curried parsnip soup again get it in the freezer... divine, Parsnip rissoles ... I could go on but I dare say you have had enough  :lol:

What a good idea to mash and freeze them, Have just done the first large freezer bag full. Will do a couple more tomorrow. Thanks Jambop

They take up less space mashed and even after mashing you can use them to make soup , cream them and sub them for potatoes... even though they are actually nicer and as said make a creamy curried soup from them... I recommend them to the house! :lol:
