That was my FIL too until he was 70 years old (no joint problems, luckily).  He baked in long gas fired brick ovens the went out under the garden. The only thermostat was his hand on the iron door.  You've never tasted bread until you've had an oven bottom London Bloomer.  His Vienna was bliss.

I can give you a link to a really simple little bread recipe I only discovered yesterday. It is a bit like soda bread in flavour and texture but uses quick dry yeast. I am now hooked on it and it literally only takes minutes to prepare and about 40 mins to bake.

Obviously no good for sarnies but with a lump of cheese or smothered in home made jam, you just can't beat it and I'm sure its adaptable if you fancy playing around with different flour options.

By the way I discovered that an 8 cup loaf tin is 9" x 5" x 3"  :D
For the resting period I jut covered the tin with a damp tea towel and left it by the side of a warm oven - worked a treat.

forgot to add i did some lovlet nan breads and made 2 into paeshwari nanns they were realy nice hbby loved them

I have a great recipe for naan, but even still I cheat sometimes and adapt my flatbread recipe to make the preparation time even quicker. :D

ive got one without the yeast it only takes 20 mins tops and they are good makes about 6 and the same with the ones i just did makes 6 they were much fluffier only the proving took the time but i have to say they filled the bowl , i didnt have enough flour so threw in some of my wholemeal lovley ,
