Has anybody ever successfully grown pak choi without it bolting? If so, what's your secret? This is the second year running I've tried to grow it and had total failure, with the plants going from seedling to bolted seemingly overnight.

Grown it successfully here a few times. If you have it bolting already this year, I would tend to think that you sowed it on the early side. Why not try some more once/if the weather settles down a bit in the next week or so?

it only works for me sown later in Autumn.
I read somewhere that they like 12hrs day and 12 hrs night and it seems to work ;)

I have tried several non-bolting varieties and prefer Yuushou. They don't grow amazingly big, but are OK if I can keep the slugs off them and don't let them get short of water. I start them off in modules and transplant them once their roots fill the modules.   

I've got Joy Larcom's book on Oriental Vegetables and interestingly she suggests that low temperatures early on in growth is one of the reasons why many Orientals bolt (along with day length, genetic factors and stress).
