Sweet Corn Relish

Sweet Corn Relish

1 pint white wine vinegar
3oz sugar
1 tbs mustard seed or 1 tspn English mustard powder
1 tspn salt
1lb sweetcorn kernels, fresh or frozen
1green pepper and 1 red pepper both prepared and finely chopped
1 onion finely chopped
4 celery stalks, finely sliced

In a large bowl mix a little of the vinegar with the sugar, mustard and salt to make a smooth paste, then stir in remainding vinegar.
Pour mixture into a large saucepan and bring slowly to the boil.  Add the vegetables to pan and simmer for 20 mins or until veg are just tender.
Cool slightly and pour into warm jars, seal, label and enjoy.

*stupid question alert*

Is there an easy way to get the kernels off the cobs? ... apart from handing them to my OH and saying "I grew 'em, you strip 'em" ?

hold the cob at one end in a large almost flat dish or plate at at a slight angle and then run a knife down it from about 1/2 way down, then turn it and do the other 1/2.  (No responsibilty for fingers, take care)  Good luck, Mrs Bouquet  PS:  I think your idea sounds better :!:  :!:

knife? .... hmmm, she just about trusts me with blunt crayons :? I'll let you know how many digits I lose when my corn ripens ;)

Thanks for the tip and the recipe :D ... although I think I may stick to my current method of stripping the kernels ;)

Naaa! Wouldn't be upset Yabba, just curious, though I've seen through google the correct spelling is 'yerba mate'. It's a tea I drink sometimes to clean out the liver and kidneys, that's all. Nothing serious enough to get me offended/upset :wink: .

Mrs B, i am going to have a go at the relish, sounds good.  Once done do you have to store in a fridge or can it go in a cupboard at room temp.  How long will it last in both?
