im looking for information from other allotment sites about wireless security cameras, weve got the dummy ones up but these have not deterred intruders and arsonists so we are looking at going down the lines of the real thing,i know zilch about these things so was hoping to glean information from anyone about make and how these things work.

Your main problem is going to be power supply and wireless range unless you get one of these things that link to a smartphone

What about making you own with a battery powered Raspberry Pi. There are instructions around for movement detection. I've created one for indoor use, but using a battery is supposed to be simple.

Might the wildlife ones be any use?  The sort of thing that can be put in a nesting box, runs on batteries and (I presume?) stores the video to an SD card.  If that is the case, and thus because they don't transmit in real time, if the camera is stolen there will be no evidence, so the camera positioning would need to be covert.

As Cadalot has said the power supply is going to be the problem, we have put some up on some sites and have used the drains to to run the power supply. Have you looked into using a Bushnell Trail Cam they are battery operated and you can move them around as you, like they work of a motion sensor.
Edit Kristen beat me to it Lol.
