is there a optimum direction that beds should be laid out in such as north/south or east/west

North south catches most light but it's not worth sweating over if they aren't exactly.

We're all East - West here.

I was down there very early today (six-thirtyish) and it was a treat to have the sun coming on the plot at the opposite end to what it normally does in the evening!

Everything looks entirely different!

Our veg bed runs east west ish, with the rows running north south ish.

It works in our garden and means the rows don't shade each other too much because they're open to the south which is the sunniest bit.

To be honest, I take more care with the siting of the runner bean frame and huge brassica cage which shades beds, than the direction of the beds/rows them selves  :)
