For onions read leeks?

I have a glut of rather large and lovely leeks in my kitchen, i have made as much leek and potato soup as i can fit in the freezer but an mow a bit stuck - I was wondering if i can use leeks in an onion marmalde recipe? Has anyone tryed it, did it turn out ok?

I don`t know the answer to that one but you can substitute raw leeks for onions in salads etc. Cheese and leek (cut fine) sarnies are good too. :)

ooooh mature cheddar and leek sarnies, or even better, cheese and leek on toast!!!

Not that i can get through all the leeks like that but definatly worth a try - the diet will have to start next week!  :tongue2:

Um; I still can't get my head around leek marmalade - it's taken me years to appreciate the finer points of onion marmalade but leek marmalade -  :tongue2:

I've often got a glut of leeks as I grow loads; if I've ever got too many I heel them in a corner somewhere and drag them out 4 or 5 at a time. The thing with alliums is that they store their energy and continue to grow so heeling in doesn't hurt them at all. Even if all the roots have been chopped - as long as there is still some of the bit that holds them all together at the top of the root section they would be better there than trying to find things for them to be used in.

Failing that - what i'd do is to cook them in a little oil and freeze in portion sized amounts.

Thanks for all the replies, and suggestions, i have planned a leeky menu for the rest of the week and will try freezing some too! good job my little boy and i love leek and potato soup!!!
