Re-jarring, can I do it?

A couple of months ago, I made jam and chutney.

I now have some nice jars that i want to use for Christmas gifts - can I decant the jam etc already made into them?

Er I'm not sure - when you initially made them, you'd have created a sterile environment by using clean jars and potting up when the contents were also hot, enabling the lids to create a vacuum seal.

By opening the jars, you're re-introducing a non-sterile atmosphere and I don't know whether sterilising the new jars would be enough to prevent the contents going off after re-potting.  Or whether you'd need to re-boil the contents too during the re-potting process.

Hopefully Val or someone else will come along soon who knows what to suggest  :)

I think ........that you would have to boil up the jam to make it runny again before you could fill the new jars properly (after sterilizing them of course)

Wait for 2nd opinions though :)

Ah well, maybe the Christmas gifts wont all be the same size then :)

The only way you are going to do it is to re-heat the contents to boiling point and then put into the new, thoroughly clean, sterilized jars. The chutney should be fine but you may find that the jam will go runny unless you add some more pectin.

Sometimes I've had to re-do jellies that didn't set properly and its almost back to square one to do so - melt what I have, add a bit more pectin, into clean jars and reboil to seal. The chutneys could be re-jarred but would have to be re-heated to heat the chutney then waterbathed to properly seal the jars. Without heating the chutney itself first, you'd never get a proper bottle seal.
