My first time!

Wild plum, blackberry and crab apple - all foraged.

I based it on Val's apple & blackberry recipe, but reduced the amount of sugar (personal taste, I've not got a particularly sweet tooth.)

By the way, where do people buy pectin? I went to two supermarkets and they looked at me like I was a loon.

In the end, I bought Jam Sugar, which has pectin in it... my only concern is that with all the pectin in apples and plums, it might set a bit too hard. Guess I'll find out this morning!  ;)

Hurrah!  How satisfying  :D

You can get liquid pectin in a bottle at the supermarket, can't remember the name but I'm off to the shop we don't mention in a few mins and if I remember I'll look for you.
I try to take one day at a time, but sometimes several days all attack me at once...

I seem to remember my mum using Certo (?) but, no neither the T-word or Asbo had it in stock.  >:(

I spoke with the Grocery Manager of the former and he said, people just don't want it. I replied that I did and he pretty much walked away...  ::) Mind you.that was after I asked if he thought Asda might have it.  :D

That said, a fairly successful first attempt it seems.  :)

I'm going to try ginger curd today.

Sounds like a lovely combination. You could call it hedgerow jam.

You shouldn't need Certo if it's got apples in it. Use the cores to strengthen the pectin content by putting them in a muslin (or tights) bag, with some lemon pulp and pips and cook the fruit with the bag floating in the mixture. Lemon juice should also be added after the sugar.

Certo is not something I've ever used. I don't fancy it myself, as I hear it can give an artificial flavour. But had I used it the first time, I may never have looked back! I know lots of people do.

At the moment it's cheaper to buy the jam sugar than to buy granulated sugar and add bought pectin. You can always make your own pectin stock if you've got crab or cooking apples. Bought liquid pectin is available at Tesco and Sainsbury's in the form of Certo (Tesco do their own equivalent) and sachets or dried pectin (Silverspoon) is available at Morrisons and Asda (plus some Co-ops).

Thanks guys, I'll keep my eyes peeled for future endeavours.

Given that I picked all three ingredients 'on the mooch', I have labelled it 'Forager's Jam'.  :)

Just had some on a slice of bread and the texture is perfect. It tastes lovely even if it is a bit sweet for me (next time, I may reduce the sugar content a bit.

Thanks again, I now have the confidence to give it a go and experiment a bit.  :)
